c is for cookie

I had an urge to do some baking this weekend just gone, and cookies were calling. These little babies are my mum’s chockie rocks recipe. They are basically a choc chip cornflake cookie and one of my favs as a kid.

C is for cookie

RECIPE

250g butter
1 cup castor sugar
2 eggs
1 teaspoon vanilla essence
2 cups S/R flour
1 pt dark chocolate bit pieces
4 cups crushed corn flakes (An extra 2 cups for rolling)

Preheat oven to 180C

Cream butter and sugar, fold in eggs and vanilla till light and fluffy.

Fold in flour and choc bits until well combined. Add 2 cups of crushed cornflakes mix until combined.

Roll dough into golf ball sized pieces and roll in a crushed cornflakes to finish.

Place on a lined baking tray and bake for 10-15 minutes or until golden brown. Allow to cool on a rack and enjoy!

tea party on a biscuit

tea party in a biscuitwhilst having a spot of brunch at a local cafe in seddon I spied this little beauty in the jar on the counter. I absolutely adore how much effort it would take to contruct a batch of these. Cant wait to go to a party worthy of having a crack at these myself!
